Attractive golden hue with an explosion of aromas ranging from brioche, buttered toast, yellow fruit compôte and spice cake. It is dry but offers a full yet balanced mouthfeel with a long finish and plenty of classic ‘full-on’ Chardonnay character. This rich and thought-provoking wine can be enjoyed alone or with rich fish preparations such as sole or turbot in cream with mushroom and toasted hazelnut. Consider also your favourite shellfish dish with a brown butter and garlic or roast organic chicken with shrimp and morels in cream. You also won’t find a better pairing with aged Canadian cheddar.
The Chardonnay from the old vines at the Sandstone Vineyard was hand-picked on October 20th at the peak of ripeness. After manual sorting it was whole-cluster pressed, which allows for better drainage from the press and provides the juice with added tannin and flavour. Alcoholic and malolactic fermentation took place in French oak and it was aged for 10 months in 15% new, plus second use and older French oak barriques and tonneaux from a variety of excellent coopers. Some battonage was used in order to protect the freshness of the vintage and add body and complexity. Barrels sampling lead to this final ‘best of the best’ blend and bottling took place in September 2014.
