TASTING NOTES

A brilliant medium lemon hue with a very fine and steady bead. The nose is youthful and fresh with notes of wet stone, green apple, fresh butter, bread dough and warm toast. On the palate, the mousse is remarkably rich, fine and mouth-filling. The acid is vibrant and bright throughout and the finish long with stone, cream and toast notes dominating. An excellent and complex wine ideal for drinking now well chilled (6°C). Classic matches include poached Turbot with cream and button mushrooms, Dover sole à la meunière, smoked salmon, fresh oysters in the half shell, caviar with buckwheat blinis and crème fraiche and double and triple cream bloomy rind cheeses.

This wine will cellar well for a further 3-5 years, if you prefer a more mature style of sparkling wine.

“"A fine follow up to the exceptional 2006 Grande Cuvée, the 2007 has retained extraordinary freshness and purity in this much warmer vintage, without sacrificing full flavour maturity and depth. The mousse is very fine and gentle; malolactic fermentation was prevented in order to retain the incisive malic acid, which drives through the long finish. Dosage was just 2 grams of sugar, and this is indeed virtually bone dry, yet this is anything but austere or shrill: there's a real sense of richness and fleshy fruit on the palate. Sautéed green apple, fresh ginger, baked bread, orange, lemon, and lemon custard notes linger on beautifully, and this comes across as fresher than the 2006 at the same age, and should continue to gain in complexity over the next 3-6 years, though it's delicious now to be sure."”

“A gorgeous and generous nose of lemon and brioche, green apple and fresh baked bread with creamy vanilla and toast accents. It’s built in an austere style, with very low dosage, chiselled acidity and a fine mousse that tickles the palate and gives way to fresh apple and lemon flavours that are just beginning to soften. Tertiary notes of warm toast, custard and tangy minerality add to the complexity of this well-built sparkler. Drinking rather well right now but can still cellar a wee bit longer to draw out further nuances.”
