GAMAY  BLANC DE NOIR 2021 WITH:
Clams with Sparkling Wine Lemon Butter and Sourdough Toasts
The fresh clams with lemon butter will impress your friends and family.  It is a perfect dish to serve to start an evening of celebration.  The sparkling wine is vibrant and refreshing, showing lots of fruit, fresh dough and cream with the clams.
WINE CLUB EXCLUSIVE FUMÉ BLANC 2022 WITH:
Lobster, Crab and Shrimp Dumplings with Lime and Miso Aioli

The lobster, crab and shrimp dumplings are a wonderful pairing with the Fumé Blanc.  The saltiness in the miso aioli brings out more passionfruit and candied lime in the wine.  The sweet lobster and crab meat complement the vanilla and spice.

These are perfect for an appetizer during the holiday season or as a main dish on a cold snowy evening!
CABERNET FRANC 2022 WITH:
Wild Blueberry and Lamb Sausage Rolls
These mini sausage rolls are great for entertaining guests during this season or even wonderful to enjoy the next day for brunch with a glass of Cuvée Rosé!  The Cabernet Franc is special because winemaker Jean-Pierre decided to age a portion of the wine in oak for two months. This addition added some extra complexity and weight to the wine. There are layers of plum compote and wild blueberry, finishing with holiday spice when you enjoy a glass with this recipe!
RESERVE MERITAGE 2020 WITH:
Caramelized Shallot, Bacon and Blue Cheese Tarte Tartin

This tarte tatin will impress your guests!  The caramelized onions bring out lots of charred wood, vanilla bean and warm spice in the Meritage.  The walnuts and blue cheese soften the tannins while leaving lots of cherry compote, black forest cake and spice on your palate.

Tasting Notes

Fine bubbles in the glass. Aromas of lemon peel, almonds, and white currants with notes of minerality. On the palate the mousse is fine with bracing acidity and flavours of lemon, fresh raspberries and juicy red apple. The finish is long, dry and refreshing with lingering flavours of tart, red raspberries.

Enjoy this delicious Sparkling Gamay on it own or as the perfect complement to bloomy-rind cheese or a chilled seafood platter.
